- Heat the olive oil in a saucepan and sauté the onions over low heat for 10-15 minutes
- Then add the spring onions and rice
- Stir and sauté for 1-2 minutes, deglaze with the wine and simmer for 2 minutes so that the alcohol evaporates
- Add 4 cups of water and bring to a boil for 15 minutes
- After the rice is soft and almost all the liquid has evaporated, add the mussels, season with salt and stir over a low heat for 3 minutes.
- Turn off the stove and cover the pot with a clean tea towel and the lid on top
- Let it simmer for 10 minutes on the hot stove. Then add pepper, mint and lemon juice and stir
