  1. Heat the olive oil in a saucepan and sauté the onions over low heat for 10-15 minutes
  1. Then add the spring onions and rice
  1. Stir and sauté for 1-2 minutes, deglaze with the wine and simmer for 2 minutes so that the alcohol evaporates
  1. Add 4 cups of water and bring to a boil for 15 minutes
  1. After the rice is soft and almost all the liquid has evaporated, add the mussels, season with salt and stir over a low heat for 3 minutes.
  1. Turn off the stove and cover the pot with a clean tea towel and the lid on top
  1. Let it simmer for 10 minutes on the hot stove. Then add pepper, mint and lemon juice and stir

The dish is ready to be served.
